Le Saunier de Camargue

Fleur de Sel translates to "Flower of Salt." The salt earned its name because of the aroma of violets that develops as the salt dries.

The salt is hand-raked and harvested in France. This is done only once a year during the summer when the wind stops blowing and millions of salt crystals form at the surface of the water. Only the premium top layer of the salt bed is used. Skilled workers gently scrape the moist, textured crystals that form on top of the salt beds. The harvested salt is flaky, slightly damp, and composed of distinctive salt crystals with a faint grey and pink hue.
